Valentine’s Truffles

Valentine’s Day is just around the corner.

Do you know what that means? Chocolate, chocolate, and more chocolate!

I like to make my own fantastic chocolate truffles instead of buying one at the store because they have healthy ingredients and guilt free!

They are super easy to make and they melt-in-your-mouth deliciously making a perfect gift for that special someone in your life (or yourself!). Valentine’s Day Spicy Chocolate Truffles are full of heart-healthy fats from cashews and coconut butter.

You will fall in love with these truffles!

Rolled in unsweetened shredded coconut, bee pollen, maca powder, matcha tea, cocoa powder, or crushed freeze-dried fruit for an elegant touch.
You are gonna love it!

Ingredients:
1 cup cacao nibs
1 tablespoon maca powder
1 cup cacao powder
1/4 teaspoon salt
3/4 cup cashew butter
1/2 cup coconut nectar
3 tablespoons coconut oil melted
1 tablespoon of vanilla
1/4 teaspoon of cayenne

Other options for coating:
Unsweetened shredded coconut
Bee pollen
Unsweetened cocoa powder (or carob powder)
Matcha powder
Maca powder
Crushed freeze-dried fruit

Directions:
Place all filling ingredients in a food processor. Process until well combined. Remove from food processor and place in refrigerator to let set – 30 minutes. Remove from refrigerator. Roll into 1 inch balls.

For coating:
Dip truffles in the coating. Place the truffles on plate and place in refrigerator until solid – about 30 minutes.
