Lectin – Lose your belly fat, reduce pain and increase mental clarity with a lectin free diet.

Grains and beans were not introduced into the human diet, in any substantial way, until roughly 10,000 years ago.  While this sounds like a long time, it is more like a blink of an eye particularly when you consider the millions of years the human microbiome was structured around eating single leaf plants.  The lectins found in these ‘foods’ have been wreaking havoc on our bodies ever since.  Two casualties being the health of our immune systems, and our ability to maintain lean bodies.  Lectins are a primary cause of increasing fat stores and the inability of many people to lose weight – even for those who are disciplined enough to maintain a ‘healthy meal plan’.

In addition to consuming lectins directly, our society consumes the flesh of animals that are fattened up prior to slaughter by feeding them, you guessed it, lectin packed ‘food’ that is a completely unnatural diet.  Cows do not eat corn and soybeans in their wild state, they are meant to eat grasses.  The purpose of feeding these grains to livestock is to fatten them up prior to slaughter to help fetch the highest price per animal on the open market.  The problem for people consuming meats cultivated in this manner is that the lectins consumed by livestock are then passed directly to the individuals consuming that meat.

Another lectin-related issue is that there is a breed of cow that had a genetic mutation causing the formation of a lectin-like protein to form in the casein produced in their milk.  These cows are the northern European variety such as Holsteins.  The casein produced in their milk is the A-1 variety and unfortunately, it is able to bind to the receptor sites on the pancreas which allows your body to receive important blood sugar related information from the insulin being released into your bloodstream.  This interferes with your body’s ability to regulate its blood sugar levels while simultaneously causing an auto-immune attack on the pancreas.  These lectin-like proteins bind to the pancreas and are identified as alien proteins – therefore the body attacks them.  The result is damage to the pancreas and resulting inflammation – it is a likely cause of type 1 diabetes.

The foods that are commonly ‘known to be healthy’, it turns out, are packed with compounds that directly contribute to body-wide inflammation, immune system issues including most if not all auto-immune diseases and many other health conditions.  Dr. Gundry, in The Plant Paradox, talks about how his patients dramatically improved, even after removing the ‘white angels of death’ – flour, sugar, potatoes, and milk by also removing ALL grains, pseudo grains such as quinoa, buckwheat, and many others, and beans.  He directly witnessed these dietary changes leading to the elimination of cancers, reversal of coronary heart disease, auto-immune diseases, and type 2 diabetes.

Many people hear about this and they typically have a fairly strong reaction.  The most common is an immediate fear of losing their ‘favorite’ foods.  They can’t imagine a grain-free, bean-free diet with limited dairy & meat consumption.  It just doesn’t seem possible.  In addition, there is quite a variation in how people react to lectins.  For some, they cause overt highly distressing disease states, for many the drain on their systems is less noticeable as it is hidden in conditions that people get used to over time – fatigue, issues with mental clarity, mood and hormonal well-being.  Dr. Gundry actually goes on to say that the ones who are highly sensitive are the lucky ones as we are surrounded by a society that provides convenient and easy access to lectin packed foods.  In other words, it frequently takes significant motivation to make the required changes in our diet.

My name is Angie Spuzak, Nutrition Consultant, and my introduction into the world of ‘healthy foods’ developed after I purchased a café that was vegetarian focused.  Since that time I have owned and operated several cafés and a restaurant.  My focus migrated toward a vegan diet but after years eating what I thought was the healthiest diet on the planet, I found that I was not feeling very good at all.  While I saw some great improvements in health for customers who started eating a vegetarian and vegan diet, I also saw some significant limitations.  This pushed me in the direction of becoming a nutrition consultant via the Bauman College, previously based in Boulder, CO, nutrition program.

My background of in-depth training in nutrition combined with years of creating new recipes puts me in a unique position to help those of you who might be interested in exploring more of a lectin free lifestyle.  I will be creating 1 blog post a week providing delicious, and largely easy to prepare, lectin free recipes.  In addition, I will be providing information on products such as lectin free pancake mixes, muffin mixes, and even bagels!  Sticking to this diet does take a concerted effort, but there are plenty of excellent foods to choose from and with the help of consistent delicious food planning from an experienced professional your odds of success will only go up!
