Nourishing Vegetable Mineral Broth

Oh, how I love soups and broths!
They just run in my genes.I’m addicted to Polish because  anytime  I was sick ,I was always given vegetable broth, bone broth or chicken soup to help me feel better. It worked like magic- Polish Penicillin—a.k.a. Chicken soup!
Ever since I was young, I was always in the kitchen tasting dishes and cooking with my family. Cooking nourishing meals just runs through my veins. It is for this reason that  I recreated my grandma’s old recipe for you.

 

This article talks about a nutrient-dense and delicious veggie broth with fantastic health properties.
It is one of my ‘go-to’ broth during the winter or when I’m sick. My friends and my family love to drink it whenever they get a hold of it. It can come in handy when you cook rice or any grains .The grain  can be used  instead of water. You can add it to your stews and soups as a base.This way,you can always incorporate  broth into your life and get better nourishment.

 

By making your homemade vegetable brothy, you are avoiding preservatives and other potentially harmful ingredients such as monosodium glutamate, hydrolyzed wheat gluten, dextrose, and sugar. Another benefit is that you can choose your ingredients they way you please. My recipe is just an example of abroth with targeted nutrition towards healing.

 

This broth is mineralizing and alkalizing, and it can cleanse the body along with reenergizing those feeling exhausted. It is rich in different nutrients, especially the  essential minerals. You can also add some traditional vegetables and spices from the country you are  from or your family traditions to make the broth sound more authentic. Cooking in such a manner  will make a unique experience for you.

 

For instance, in my country,Poland, soup stock veggies or bone broths are a vast tradition! Everybody makes them! The traditional soup stock in Poland include parsnip, celeriac root, leek, carrots, cabbage, onions and garlic. Earlier on, it was challenging to find parsnip or celery root in the US. However,they are nowadays getting more popular so you can find it in the grocery store easily. They are fantastic and super flavorful. Nourishing vegetable mineral broth recipe

Ingredients: Make sure that all the ingredients are organic.
• 3 unpeeled organic carrots,cut into thirds
• 2 unpeeled medium organic yellow onion, cut into chunks
• 1 unpeeled parsnip
• 1 peeled celery root
• 1 organic leek both whole, rinsed well, cut into thirds
• 1/2 bunch organic celery including the heart, cut into thirds
• 1 unpeeled organic garlic
• ½ medium green cabbage
• 1/2 bunch fresh flat-leaf organic parsley
• 1 organic yam with skin on quartered
• 3 8- inch strip of kombu (sea vegetables)
• 4 bay leaf
• 4 inches unpeeled ginger
• 2 strings of rosemary
• ½ lbs. shitake mushrooms
• 2 strings of thyme
• ½ cup dried nettle leaves
• 15 black peppercorns
• 8-inch burdock root
• 5 whole allspice or juniper berries
• Celtic salt to taste
1 lemon
1 tablespoon apple cider vinegar

 

Instructions:
Scrub and rinse all vegetables well. Rinse the remaining vegetables well, including the kombu.

Put all ingredients in the large pot, except the salt.

Fill with water to 2 inches below the rim of the pot.

Cover and bring to a boil.

Reduce to low and simmer, uncovered, for 3 hours.

Simmer until the full richness of the vegetables can be tasted.

Add salt and stir.

Right on end add two tablespoons of freshly squeezed lemon juice or 1 tablespoon of Apple Cider Vinegar.

Strain the stock and bring to room temperature.

Refrigerate or freeze.
